Frittata for One

Easy, quick, healthy and budget friendly!

Ingredients:

  • 2 eggs
  • 2 Tablespoons milk
  • ½ cup minced vegetables and/or cooked meat
  • 1 teaspoon butter for small frying pan

Directions:

  1. Beat eggs with milk in a small bowl and keep it handy near the stove.
  2. On low heat, gently cook the minced vegetables and/or meat with 1 teaspoon butter until soft.
  3. Spread the vegetables and/or meat evenly over the frying pan. Add the beaten eggs and milk.
  4. Cook with a lid on until the egg is cooked through, approximately 5 minutes.
